Pyjama Day blueberry hotcakes
Sunday at our place was a relaxed tracksuit, newspapers and blueberry hotcakes kinda day. We'd both been a little unwell through the week and, although some (kind) invitations had come our way, we declined politely and relished in having a day indoors all to ourselves.

I believe there's not enough down time these days and it's little wonder that so many people are tired much of the time, myself included. It's all crazy busy and go, go, go. Of course, it's fun to get out, socialise, see friends, meet new people and do things; but it's also ever so fine and dandy to simply kick back and have a pyjama day.
It's about giving yourself permission to say 'no', even if it's only every now and then. I challenge you. One weekend soon, shut the front door, switch off your mobile and indulge. Don't feel guilty, just do it. You never know, you might even like it!

BLUEBERRY HOTCAKES (PIKELETS)
125g punnet blueberries, washed
4 heaped tablespoons plain flour (about 80g)
2 tablespoons vanilla infused caster sugar
100mls (1/2 cup) soured* milk or buttermilk
1 free range egg, separated#
1 tablespoon ghee/clarified butter +

Combine the flour and caster sugar in a bowl and mix with a whisk to free any lumps. In a separate bowl, whisk the egg white until soft peaks form. Add the egg yolk and the milk or buttermilk and whisk well. Gently fold in the beaten egg white using a spatula. Stir in the blueberries, mixing carefully. 

Heat a griddle plate or frypan and melt the ghee. Ladle hotcake batter onto the hotplate with a large serving spoon. Allow to cook to golden brown on one side and then, very gently, turn the hotcakes over. Dust with icing sugar and serve. This quantity made six.

* If you don't have buttermilk in the fridge, add a few drops of lemon juice to the milk and let it sit a while.
+ Use butter or margarine if you don't have ghee.
# Allow the egg to come to room temperature. The white will be fluffier when whisked.

Note: the blueberry season is coming to an end in Australia, so buy up from your local farmer's market or blueberry farm nearby and freeze the fruit for winter months.

My 3 year old often eats dinner poorly and then asks for a pancake just before he goes to bed. (Wait, I think I've just figured out why he doesn't eat dinner properly lol). So I cook him a pancake maybe every other day. I've never thought of putting berries in it though - next time, definitely!

These look delicious Lizzy. We are big pikelet fans in our house, often enjoying them for morning tea in the cooler months. The blueberries look like a really tasty & healthy addition. I love your blue props too, especially the pretty plate with the ingredients laid out on it. Is it from Mud? It is a lovely shape :)

We rarely have a pyjama day, both our children wake up early and are always on the move. However, in the hot weather we tend to have a siesta after lunch before getting busy again later in the afternoon.

Thank you Jane. The plate is a pavlova plate that was given to me as a gift by some very very special friends. I love it, not only for the pretty colour, but it has sentimental value. Siesta after lunch sounds divine!

These look divine Lizzy! My little boys (and Mr Fresh) love pancakes. They have become a Sunday morning tradition at our home. I have been using berries while they are in season. They make such a lovely addition :)

I have pyjama days often, and I'm very good at saying no. These days I don't even bother making an excuse - I'll say, "thank you, but I don't feel like doing that". Hey, it's the truth! :)

Yes, I used Pepe Saya butter, but soured my milk as I forgot to pick up some of the buttermilk at the market stall.

I do find it hard to sit and do nothing but I do think it is a good thing to set everything aside and indulge yourself and what better way by eating those delicious looking pancakes with blueberries! :)
