Australian Pears, Horticulture Australia and Apple & Pear Australia Limited have teamed up with a lineup of esteemed chefs and cooks, including Maggie Beer, Justin North and David Bitton, to produce a superb cookbook titled Rediscover Australian Pears.
The publication celebrates the versatility of the fruit through a unique collection of sweet and savoury recipes. For instance, there are exquisite-sounding recipes for ravioli of Joséphine pear and mascarpone; creamy artichoke and pear soup; sautéed pear on a spinach and ricotta pizza; pear and prawn tempura; pear, smoked trout and dill croque monsieur, and pear and blue cheese terrine. On the sweet side there are little pear and vanilla cakes; chocolate and fresh pear pudding; oven roasted tandoori winter nelis pears with star anise and honey yoghurt; and goat cheese pannacotta with roasted pear.
My mouth is watering already and, what's more, the really good thing is that by filling my market basket and cooking with Australian pears, I know I'm supporting Aussie growers.
