Rosemary focaccia; brioche with caramelised peaches; French toast with pears; and chargrilled pepper, parma ham and pine nut pizza are just a few of the mouthwatering offerings in Grace Cheetham's latest book, Simply Gluten-Free & Dairy-Free, proving that food intolerances don't mean that you must miss out on great-tasting, nourishing meals.
Grace Cheetham is the internationally acclaimed author of The Best Gluten-Free, Wheat-Free and Dairy-Free Recipes, and publishes a blog that was voted by Channel4.com's 4Food as one of the best gluten-free and allergy-friendly blogs. She also leads cookery demonstrations and classes, sharing her expertise on food intolerances with others. Through her own journey, Ms Cheetham says that 'it took time to learn to adapt [her] diet,' but once she learnt to make meals that she didn't react to, her 'relationship with food evolved.'
Part of the journey with being diagnosed with food allergies and intolerances is the discovery of 'new' ingredients that work as alternatives to gluten and dairy.; or that are naturally gluten or dairy-free. The information gathered is shared in the 'Getting Started' chapter, which explains how to stock up on lots of different foodstuffs such as rice noodles, buckwheat and glass noodles, rice and maize flours, as well as chestnut flour. There's also quinoa, amaranth, cashews and almonds, coconut milk, kudzu and a range of other ingredients.
There is also an informative segment about 'Helping your body to heal', which is important for those who suffer from symptoms such as asthma, migraines, chronic fatigue syndrome and IBS, and need to allow their immune system time to recover from the illness caused by food allergies and intolerances.
The verdict: Simply Gluten-Free & Dairy-Free is a valuable resource for every cook, whether they have food intolerances or not. The recipes are inspiring and delicious. Now I'm off to road test the brioche!
